Panel 1: As she and Elly colour the eggs, Lizzie asks her mother why they do this. Elly doesn't know. Perhaps, she thinks, it's because the egg signifies a beginning.
Panel 2: After all, Easter itself is a beginning and so is Spring. She then talks about how most civilizations have a Spring festival to demonstrate joy at the rebirth of Nature.
Panel 3: While Elly is coming up with interesting theories, Lizzie tunes her out so she can wonder why the longest answers begin with "I don't know."
Summary: I wonder if the point of this is to weep bitter angry tears because nooooooobody pays attention to Elly's wisdom. We know that Elly likes to be thought of as being worldly-wise and also most of the time, her children and husband do not listen to her so this could be another example of that.
